Nitro has an option to assign a shortcut key for specific function. You can see this by going to Customize Keyboard. For you convenience, here's the screen-cast. You will need to select all the pages first in the document before rotating them. Please use the Thumbnails section to select all (CTRL + A) the pages then execute the rotate action.
