Mostly I don't want to use OCR and I open a lot of documents all day, and then I keep having to close this notice so I can read what's behind the notice. To do so, open up Nitro Pro and go to, "File > Preferences > Notifications" and uncheck the option, "Show In-Product Messages". This will prevent the OCR message from popping up. Cheers!
