Can I create a field on the pdf that someone can sign on a touch screen?

MS Surface Pro

One of our employees would like to create/use a form on his MS Surface that can be signed by a client.  I have not been able to find that this is possible.  Can I create a sign able form/field that allows users to use their finger to sign the document?
