Need to be able to edit content in templates before requesting signature

I have templates loaded that have content that needs to be edited or added before I send to the client to be signed. It seems the only option I have when preparing a template for signing is to add or adjust the signature fields. I want to be able to edit the pdf in certain files that do not need to be actioned by the client. please help.

I thought a template would make things easier, but there is no easy way to add in customer details without me adding custom fields, and then I am not able to continue through the template as it asks for required fields and  cannot find anywhere to do that.  Letting them populate a field is not enough. I am using Chrome
