Extracting Text Layer

Can I directly extract the text layer from a PDF? It appears that when I use the extract to text file function,  the Nitro OCR engine is used to create the text file.  Is this true? If so, is there a way to grab the existing text layer created from my scanner's OCR engine?

Maybe this is a silly question, but does CRTL-A & CRTL-C work? (Select all, and then copy).

You could then paste it somewhere else.
