File Open takes too long, where is simple File Open dialgo

When i do File Open it takes way too many clicks with all sorts of useless choices, how can i make it so that File Open simply and directly opens a normal File Open dialog ?

For me this is possibly a showstopper on adopting the program

I don't know that there's a way to change the menus, but you can use CRTL-SHIFT-O to access the File Open dialog that you're expecting.  Otherwise, the way the File menu's Open works is almost identical to the Office 2016/Office 365 File Menu.
