PDF Conversion to Excel - partial and full of errors

Neophyte Nitro user and don't understand - or can fix - my problem. I can scan using nitro, or using my Canon MF743C. I can scan in color (original blue font), or in Black and White. I can scan by page and convert, or multiple pages. The resulting PDF to Excel conversion is the same - using a single page conversion several rows converted cleanly, sometime the same rows, sometimes different rows. Using a multi page conversion, sometimes different rows on different pages, sometimes not.

No matter the print quality, density, font color, scan utility I cannot get a "clean" conversion - the very reason I invested in Nitro.

Help appreciated, this is a hugely important and timebound project for me
