Can't edit a PDF document that was scanned in through a copier

I'm having some issues with editing a scanned PDF using my installation of Nitro Pro's OCR feature. The program aligns the text and states that it's completed the OCR but after trying to remove or append any text, it looks like it types under the document instead of replacing the text. Other times, it types on top of the text and makes it look disheveled. Is there a way to make it edit the text that's on the scanned documents? Thank you
