Question About Adding Permissions and Fillable Spaces in a Workbook

Hello,

I will be launching a self-study digital program soon. The main component of the program is a workbook. The PDF has fillable spaces, so the students can practice and write in the workbook. My question is: what permissions should I include to protect my workbook? Is it even necessary to secure it since it is a fillable workbook? 

My second question is about the fillable spaces in my workbook. I've tested the fillable fields, and they work fine. However, when I write in the blanks, the font comes out rather large. Is there some way to decrease the size of the text? Thanks in advance for your help!

I posted a question a few days ago with no response. You can see it below. I can't get anyone on the phone, and each time I try to submit a support ticket, it takes me right back here.
