At the moment, there is no setting to turn off email notification when sharing a document. We recommend creating an Inbox Rule so you can manage those notifications. I don't have that much knowledge but when I read this query then the solution that comes in mind first. I told you via this reply. If we do that then we don't need to turn off notifications.
